Vital Wheat Gluten Powder is wheat protein which is obtained from wheat or wheat flour by separating starch or other carbohydrates and other non-protein components, it has high viscoelasticity after hydration.
Vital Wheat Gluten could be used as natural additive to be added into flour to produce bread, dumplings and fine dried noodles. Wheat Gluten can also be used for vegetarian vegan food products, used as a meat substitute, often to imitate the flavour and texture of duck, poultry, pork, beef, and even seafood.
When Vital Wheat Gluten is added to bread dough it helps retain the gas and steam from baking and gives more volume to the baked bread. It can especially be helpful for baking breads made with course, wholegrain flours and cereals.
